I've never heard the term chess pie before (damn Yankees) and had to Google it and it sounds delicious! Up here Chocolate pudding pie is ubiquitous but I don't like the texture much, after looking at a few chocolate chess pie recipes I think I'm sold

Tri tip is all over the internet now and it’s a pain in the ass to get out of the beef so, now that your talking about it next time you go to a butcher shop to get one thank your butcher cause there a pain in the ass, and the worst part is you’ll get people usually what I call ‘city folk’ I’ll take as many tri tips as I can get well mother fucker you only get 2 out of the whole beef so you will get 2 lol and than they say well I’ll take less roast if that helps me get more no mother fucker you only can get 2 of them cause that’s all that’s in your animal lol

That's good to know! I've come to appreciate certain cuts more, like bavette and hanger steaks, or pork tenderloins, because when you buy half animals you only get.... one

Hanger steak is bomb, thing with that it’s an easy one to get out but you get one slab that you can cut into steaks..one of my favorites is skirt steak, so tender and so flavorful but it usually gets forgotten around my area the only ones who ever want it are the Hispanic people sometimes I think they are the only ones who know what’s up cause they take all the good stuff tongue, heart, liver, they’ll take whole heads and get all the goodies

Hanger steak is bomb damn thing with that it’s an easy one to get out but you get one slab that you can cut into steaks..one of my favorites is skirt steak, so tender and so flavorful but it usually gets forgotten around my area the only ones who ever want it are the Hispanic people sometimes I think they are the only ones who know what’s up cause they take all the good stuff tongue, heart, liver, they’ll take whole heads and get all the goodies
I love all that stuff. I have a pigs head in my freezer right now, debating on whether to make head cheese or sisig with it.

And hanger steaks man... skirt, bavette, flank I'm in love with all of them. People sleep on them so hard. Unfortunately I think that's changing but man... so damn good. It's like, how would you like a steak as tender as a filet, with the flavor and fat content of a ribeye, that takes marinades as well as a tip? Shits gonna be $30/lb when people figure it out. All my cheap cuts are getting expensive now lol

They are the only chocolate pie. Definitely try one.
I got an easy (no bake) dirt cake recipe that everyone will love. It will make you fat though

I use the Parker House roll recipe also it takes 2 hours but they are great.
Might try more yeast in your rolls.

The meat markets around here look like the meat section at Walmart. Its pitiful.
They only use a ban saw to make cuts.
Can't get any good meat here unless you raise it yourself.

The bandsaw butchering lately is killing me. Even some of the local farms I get stuff from do it. I made a pork tenderloin the other night that tasted great but it looked like a child butchered it using a weedwhacker

The meat markets around here look like the meat section at Walmart. Its pitiful.
They only use a ban saw to make cuts.
Can't get any good meat here unless you raise it yourself.
Ya it’s all about efficiency it’s hard for 1 guy to cut 6 whole beef a day with a knife the faster you work the more money to make I used the band saw for the chuck roast, rump roast and t bones and than just to break stuff down other wise it’s all knife 10 inch breakdown knife and 6 1/2 inch boning knife you’d be surprised what you can do with just those 2 things

They are not on your level.
I'm talking splinters and sharp bone in everything. Im pretty sure they only cutting up chicken in the back. I'm trying different places every week. It's all the same.

All this meat talk is making me hungry ?. I’m off to the butchers later to hunt a nice fat Tomahawk steak . Medium rare on the BBQ . Might even fire up my Gas Charcoal .

@Meatman Hey mate what’s your take on the best steel blades if one was looking for a good fillet knife ? Amy particular brands you use ? Any particular suppliers ?

I recall in the 80s a Californian friend came down under to fish with us and was surprised to see meat pies sold over the counter from corner stores as a lunch option same as you get hot dogs .
Millions are eaten every day for lunch as a pretty stable part of our lunch diet .
We call Ketchup Tomato sauce instead so was bloody funny when he’s walking out the store doing his best Aussie accent saying “ I got a pie with sauce mate “
One of those look back and laugh memory’s
