I had a very nice family from Turkey move in next door to me about 4 years ago.

No, no landrace or tobacco connection...?

It's become a tradition that the Mrs will bring over a container of Noah's Pudding at the start of Ramadan.
Unknow to them, I pass on it - has waaaay to much sugar.

In return, I always sling them a sourdough flatbread/focaccia one evening before Ramadan ends...... and tonight is the night!

Fashioned a dough from the good ol' Trader Joe's Organic All Purpose flour, and about 20% home milled Ethiopian Blue Tinge Emmer.

Last year I interrupted the evening prayer...so I'm trying to time things - but in looking, there's two evening prayers....???
Will hopefully thread the needle and get something baked and delivered inbetween Maghrib and Isha.

Oven is preheating - and will snap a pic once these babies get brown tonight.
It's always a gamble, but hopefully one out of 4 will be presentable.

After focaccia #2 came out of the oven, my window of opportunity had arrived. Picked the one on the right. Neighbors answered the door pretty quick, so it seems we weren't interrupting anything other than dinner.

Remaining 3 will be getting the decarb treatment overnight. Always grateful when things turn out.

Making pizza dough this morning and I’m using the King Arthur recipe, with discard. One of the optional ingredients is King Arthur “ pizza dough seasoning”, so I of course googled a recipe for it. It’s just powdered cheddar or any cheese, onion , garlic, and Italian seasoning.

I am so stoked I looked into it, because ever since @UncleB got me hip, I’ve been looking for any reason to dump the cheesy seasoning blend on stuff.

Hopefully it comes out how I imagine it will…

Yanked one of the focaccia out of the freezer this afternoon and had a couple slices.
Took a shot of the crumb. Nice texture and flavor, but nothing out of the norm.

haha I forgot all about following up with this. The pie was banging!! I was a little worried at first while kneading the dough, as the cheesy seasoning smell was a little strong. I thought maybe I added too much, but it ended up being perfect. I was super hungry and only managed to squeeze off a couple pics of it though.

Wife asked for a loaf to slice, she found this Honey Wheat Sourdough Sandwich Bread, I fed my sprouted wheat flour starter, some super sprouted wheat flour, I got it at the local all natural hippy store. Always a bit spendy there, but I do love their stuff.
It has such a unique taste, part sourdough and fermented apples of all damn things.

Wasn't sure they would be done in time to sling a pie, but everything worked out.

Had the dough mixed last week before getting confirmation from @Mim Towls on using the TJ's Cheesy Seasoning (really felt like I was missing out).

Sourdough crust using that Traders Joe's Organic AP flour w/ 10% home milled rye added. Laid down the chopped basil first, then placed the stacked Dutch Goat's Milk Slices. Finally, dumped some chopped up Manzanilla & Kalamata on top. Not pictured, but drizzled on a little tomato sauce after the bake.

Been trying to dial in my technique using the baking steel. I've given up on it a few times. Getting closer to where things need to be.

Took a vacation day today to deal w/ taxes..... I'm such a jerk ???
Wasn't sure they would be done in time to sling a pie, but everything worked out.

Made some buns from the King Arthur recipe today for grilling tonight. Threw down some of the everything bagel seasoning on some and sesame seeds on a few. Can’t wait to get the grill going after I harvest this Dante’s inferno I’ve been putting off for days.
