Haven't shaped an actual sourdough loaf in more than a year. Got inspired recently get back after it.

50% home milled hard white hydrated @ 100%, and 50% Trader Joe's organic all purpose hydrated @ 72%.

Cold proofed in the fridge for 2 days.

Baked covered on the stone @500F for 15 min, then finished on a rack @450F.

Crumb is a little tight in spots. Likey just a tad underproofed, but eats just fine ☺️

@UncleB , I too am on a sour dough kick. I've been popping out three loaves every week at least. I just use the recipe @Willie posted, but substitute the yeast with a half cup or so of sour dough starter. My family enjoys it so much I don't think I'll ever buy bread again.

The Willie recipe is super straightforward - it's truly all a person would really need.
As big as that 50lb sack looked a while back, you may be acquiring another soon!!

Damn I'm hungry now.....well always but I digress.....those stromboli's look to be calzones. A good way to differentiate is a calzone is like a taco and a stromboli is like a burrito.......altho they taste the same :D

Damn guys, if it weren't Taco Tuesday I'd have to whip up some bread. I haven't had a sour dough culture in over a decade. Last one I got from the Orange County Fair (how can they call it a Fair when a beer is $5 each?) The place that sold sour dough bread with cheese. I asked for just the dough. Guy was cool and didn't even charge me. That little bit of dough made many a loaf. Time to get some more BUT I still make bread, jalapeno cheese being our favorite.

I shall return here with ? next time I make some?

I think Strombolis and Calzones are the same on the outside, but it's the inner ingredients that set them apart.
They are diffenent things based on how they are made. The inner ingredients can be anything you want. For example, my fave calzone is ham and cheese..yum :)


Locally, all calzones are the same but some of the strombolis are folded rectangles instead of rolled. (see last pic) I actually prefer that folded stromboli to the rolled one.
