Everyone loves Caramels...

This is the recipe I use:

Just takes a little patience, a candy thermometer, and the willingness to stir continuously.
Note: A buttered pizza cutter is the trick for cutting them up.

With 21% THC weed and using 10 grams, the recipe made 96 caramels that are 13.1 mg each.
Using this cannabutter calculator.

Of all the stuff that we have tried so far the butter mints (see other post in this section) and the caramels are the two that stand out. Super tasty!

That calculator assumes a 60% transfer from buds to butter. It is probably accurate for a cookie sheet decarb.

Max transfers per oil are shown below...it was tested in an ardent.

For infusion..30 minutes to 2 hours has no appreciable difference in thc% so you dont have to worry about it going a bit longer.

And after you decarb weed it retains its THC without degredation in a jar. They tested it after 30 days 6 months and 1 or 2 years and there was very little difference. I store weed decarbed in jars so i can make a batch of whatever...whenever.

And there is no chance of spoilage.

This is for your own info....you can get stung harder with clarified butter than regular butter (melt it and let it settle the solids down and use the top part without the solids to achieve the 93%)
Type of OilAmount of Material placed into 1 oz of oilTotal MG extracted into 1 oz oilInfusion %
Butter0.5 – 100mg93mg93%
Avocado0.5g -100mg92mg92%
MCT0.5g -100mg91mg91%
Grapeseed1g ~ 200mg163mg81%
MCT4g ~ 800mg707mg87%
Coconut4g ~ 800mg670mg82%
Walnut4g ~ 800mg679mg83%
EVOO4g ~ 800mg675mg83%

The caramel is delicious. I made my first batch and should have taken it a bit higher on the temp and it came out like thick ice cream sundae caramel sauce...so it works pretty good like that.

Cannamels are very tasty ! Even if you make a mistake it will still do the job and you try again !

That‘s great info! Didn’t know that. I'll write out my process for you to critique when I have a little time.
Thanks!

@OldG
First off my apologies for not writing up my cannabutter process like I said I would. Spaced it. Totally my bad.

The way I make the cannabutter (and there are lots of ways) is to decarb the weed first. To do that I grind the amount that I want to use, 10 grams of the strain I am currently using, and place it in a quart mason jar with the lid on. The jar of weed is placed on it's side in the preheated oven at 220 F, for 20 minutes, then the jar is shaken and put back in for another 20 minutes.
Note: I have one of those thermometers for your grill that I use to check the temp of the oven, it will vary significantly (at least mine does), and if the temp goes up over 250 F, I open the oven door for a few seconds to regulate the temp.
When the weed has been decarbed, I then just open the jars and add 1 cup of butter, (actually I add an extra couple of Tablespoons to make up for the amount you will loose to the weed and cheese cloth). Seal the mason jar back up and put in a water bath for 4 hours, I use an old style upright crockpot for this, works perfect, but any pan on the stove will do the same, just watch your water level doesn't boil away.
After the water bath the butter is ready to be strained, I use double layered cheese cloth. Depends on how fancy you want to get. There are a ton of tips on how to make cannabutter on the internet.
This is just the system that I have found works well for me. I like that the sealed jar helps keep the odor down to a minimum.
{I have used this same process with coconut oil (solid at room temp) also.}

I will definitely clarify the butter on my next batch.
Out of curiosity, is there any difference cooking with the clarified butter as opposed to regular butter?
OldG any tips and trick you have I am open to.

Thanks for reviewing this,
WillieP

Mason jar decarb is a great idea! And i have done the infusion in a mason jar as well (coco oil in the jar with the buds)...it works perfectly.

Clarified butter absorbs more THC. High Times and Ardent did tests to prove this.

I like coco oil better for taste.

Usually its between bacon fat and clarified butter for max absorption....MCT and Avacado oil usually round out the other 2 in the top 4.

Bacon Fat rules ! But coco oil is beter for your health.

Do you spray the glass pan out with Pam or cooking spray?
Sorry for missing the question earlier.
I choose to butter the pan, rather heavily, to help with releasing them from the pan.
I have also found that placing them on a raised cooling rack will help you get the center of the batch to come out.
Hope you enjoy them, vanilla or no.
Let us know that you think.
Cheers,
