If you sv a steak and want to finish it at a later time, after the initial sv cook time, remove and immediately put bag in ice water to stop cooking, then into the fridge to finish at your desired time. I did this on our last camping trim. We ate sv filet mignon while camping. I cooked (sv) it 3 days prior, and was still med rare after I reheated it on the grill.
