So I fermented some Habeneros, Shishito and volcano peppers with carrots and garlic for about a month... just threw them in the blender with the juice from half a lime and some of the brine to make a thick sauce like the ones you get tableside at a Thai restaurant... the flavor is more carribean though.... seriously hot, but delicious!
 
I made this last week, not a public hothead lol but my whole family loves hot food, ita a nice little mix of 7 red ghosts 7 habaneros, 6 red serranos 3 red jalapenos, and 6 thai dragon peppers, one purple onion, and 2 whole cloves of garlic, and two romas halved all smoked on the grill at 185 ish for an hour or so with pecan wood from my yard, I then food processed it all with a bit of lemon, salt and pepper, also did the garlic in a foil bowl of olive oil and oregano in the smoker, shit is nuclear hot bit smokey and sweet all at once 20200922_175540.jpg 20200923_142348.jpg

Wow I just found this a lot of my pepper plants got ate by deer but I moved some & they're still going fencing my garden area for spring gonna roast & smoke some hatch for future chipotle salsa gotta few other projects like pickled kielbasa in the works as well as some smoked teriyaki beef sticks I've got a grinder & sausage stuffer as well

The bag is smoked dried jalapenos and the plates is them crushed into a Chipotle seasoning

I tried to stay as authentic as possible using pecan wood in the smoking process.
