and then I will use chunks of different wood...I also use oak I have cut off my property...and peach wood as I cut down all the peach trees anyways as they attract deer and make cows n horses etc sick....I just keep it as simple as can be.
Cobia, kings, wahoo, etc...all taste good smoked.
Very cool! We don't get those fish up here unfortunately lol. It's almost all striper and bluefish. I eat the little mackerel we get too but no one else likes them. Black sea bass, fluke and tautog as well but I don't smoke those.

I start with charcoal but otherwise I use all splits. Mostly beech and apple from our property.

I want a green egg real bad but it's not in the budget. Plus my fiancee thinks I'm nuts for owning 3 grills as it is lol. I keep hoping to see one on Craigslist so I can tell her it was just too good to pass up.

You have to get the smoke flow right and I also do not soak my wood chunks in my indirect smoker...I do know what you mean by a bitter taste...I've gotten that before on light tasting things, but also I threw in some mesquite...of which I now never use...I just use oak, peach, apple woods. I smoke a lot of fish(well, not this year)...bluefish is only edible when smoked...lol
Haha I eat bluefish all kinds of ways but agree it's best smoked. That's actually what I mostly use for the pate I mentioned.

Do you use charcoal with the wood chips or is it an electric/propane smoker?
Salmon & shad are what we smoke out here I use the big chief electric smoker I have a sausage stuffer & when I could get it used to stuff elk hamburger & pepperoni seasoning into 5/8 sausage casings & smoke them into snack sticks venison mixed with beef hamburger works well too I would grind the venison first & mix with 72% lean you do need the fat because venison is so lean alder is my wood of choice for salmon

I have the Weber Bluetooth thermometer. It's a game changer for sure. Especially since it turns out the thermometer that's built into my smoker was off by about 40 degrees lol

Honestly I'd own all the grills if my better half would let me and I had the space.

Just realized I actually have 5 grills lol. I have a Weber Kettle grill, a 1990 Weber Genesis propane grill (best propane grills ever!), a collapsible charcoal grill for camping, the Dynaglo smoker and this guy...

I'm telling ya...T-Roy Cooks on YouTube really shows you how badass the Weber smokey mountain smokers are...the Jr. as well as the piece in the middle that makes it a barrel smoker...he shows it off well...odd fella though.

I pulled up t-Roy cooks & realized I have seen him before now I'll follow him a bit closer I was following the dawgfather t-roy is a little more simple to follow

Another of my hobbies is shooting my pre-charged pneumatic .22 cal air rifle it shoots a 22 cal pellet at 900-1000fps the special pump allows me to charge the rifle to 2000psi good for about 30 shots takes rabbits out to about 75 yards & capable of shattering a beer bottle at 100 yards but happiest at 50-75 yards this is an entry level pcp air rifle larger calibers & repeaters available some have shrouded barrels & really quiet making them backyard/neighbor city limits friendly I get a lot of enjoyment out of this little rifle its user friendly & very accurate compared to the gamo spring piston air rifle I had before this allows me to shoot without firearm regulations & in California you're allowed to take turkeys with them the gauge tells you your air pressure this rifle can also be charged with paint ball type c02 cylinders with the proper tank valve assembly but I prefer the pump scuba tanks can be used too 20211019_113711.jpg 20211019_113755.jpg 20211019_113957.jpg

Don't make much beer any more though. And haven't flown my planes in well over a year. Too busy these days.

I like Catfish quite a bit; I fish for them in Rivers, and keep some species as pets (Eclipse Catfish from India, "Cuckoo" Catfish from Africa, and an Amazonian Red Tail Catfish). I also like Sturgeon and Carp, and Musky too.

I'm also a Computer Nerd and into Unix / BSD / Linux. Used to be into "Phone Phreaking" back when I was younger and that stuff still worked LOL. I was into Street Racing back before Fast and Furious ruined it.

I hike in the woods a lot too and sometimes we go Mushroom hunting which is awesome. I've made a lot of music in my day (Bass player, but mostly make music with a Computer using LMMS). I also have interests in Coffee, Tea, Bourbon, Cognac, and Beer, and how it's made. I used to like shooting guns a lot but all my favorite guns aren't legal to own anyway so I don't do that now haha.

Making music for a long time now. Guitar,synth,drumming. I like listening to all kinds of music, but have a grateful dead obsession and yet lean heavily to the electronic side. I like demoscene/8 bit stuff, so the phreaking reference landed with me @Psychobilly.
I love nature and have been all over the USA. Lots of wilderness areas and back country hiking/camping. Now I just like staying home with the wife and pets. I like gardening for food and flowers. Enjoying learning about botany/mycology/geology to see relationships and patterns.
Lately, I got into light show stuff and SD video projection art. Some 60s type liquids and some video editing that I project. Here's a link:

What type of Cognac are you into? Method of consumption? Circumstances?

I have not consumed alcohol for close to 25 years...except maybe 1 or 2 times a year I will have a cognac...at that time I would appreciate a Louis lll...if available ?...but a nice Martell XO or a Courvoisier XO...I do not prefer Martin XO or Hennessy XO...often unless you go to a very high end bar will you find anything beyond a Henny or Martin though.

My second passion is "Falconary" I trap in-mature birds (hawks) train them and hunt with them> have a horse I ride while I hunt and let my german short hair 'flush-up: game (rabbits, phesants, ect) and the hen the hawk while flyng will make his kill. falconary is the "purest "form of hnting. One cautches the wild bird , trains it then hunts with it to provide it's food and food for me also Nature aganist Natrue after that is SkyDiving there I can fly lile a bird

I think I will get a smoker next..A good boxing day sale or something.

I was thinking I have no hobbies except ringing my wife's bell like it was noon in England....but I do have one.

I am a gearhead. I wrench on cars and i will be damned if i will pay someone else 120 bucks to monkey around in a garage...is it tough SURE it is...do you need strength..well baby i gots the minerals.

And I have a wicked set of tools. I can remove motors and trannsmissions but I would rather own a Toyota and everyone that has a car wants worked on in my garage will see the logic.

CV driveshaft in and out in 30 minutes (I made tools for it)

Bearings in 1 hour.

And the rest is easy shit.

My best bud who almost died in a car accident when we were 19...he taught me all of this. And any time i have a big job I say hey man...he comes over but i love giving him fat sacks of gummies to say thanks...we blaze doobs and laugh about that time it took me 2 hours to figure out i had the brake shoes on backwards when he was teaching me...and he was hitting a hammer on the floor he was so frustrated..and would not say a word.

But eureka produced education i will never forget.

And to be fair...no knowledge is free. Learn a trade at school or replace a lot of stuff you break as you do it...or have a best bud like I did.

My kids are blessed by the knowledge too...and i just rememberd another revenue stream for this dude...that will NEVER go back to work again..

And my funny story about legal weed...Well before october 2018 it was ILLEGAL here. My kid is in grade 5 in 2017 and the DARE shit is going on in school...this is weed kids this is meth kids they are the same etc whatever.

So we are walking through the park and my kid says ...wow dad someone is working on a car out here....it was 3 teenargers smoking a doob in the bushes and i think holy shit i am so fucked...

And then...LEGAL...They took cannabis and hash out of the curriculim for that program.

So ....blessed...you are damned right I am...and do i appreciate it. I sure do.

Hell I do believe after some massive doobage smoking its time for a giveaway of some gear...a prize of notmybeans...and 2 prizes of... check em as you grow em...G-7 The summit. Life is what happens when you make other plans !

Growing weed should not be bitter or change your beans man....Maybe I grow too much organically or something but I think it is the boomers that put my head on straight. This is about growing the most wonderful plant god ever made. Here I give you this delicious medicine have at it.

I evolved from Canuck beans......Greenpoint...and now I am growing the top shelf. Mastering the fade too...ORGANICS for the win.

That pure michigan hash is introspectively awesome...that 19 gram ball i going away for 6 months ! Then i will make a movie as i cut it open.
