Oh, GMC, or anyone else with insight, what's your secret to properly frying a pan of potatoes like that? Always seems like they're too oiled to properly brown when I try them in that quantity. Most restaurants too, apparently, as they never seem properly golden either.

Heavy bottomed pan that holds heat well, make sure the oil is hot enough before adding the potatoes and keep the heat up. Cold oil makes greasy soggy potatoes. Also, cut the potatoes small or in disc's to maximize the surface area to volume ratio so they cook through and brown at the same speed. Add onions or other aromatics halfway through so they don't burn.

My other trick that I didn't do tonight is to par boil the potatoes pieces then drop them in the hot oil. The par boil draws the starch to the surface which then crisps up when they fry... more surface area, more crispy bits...

If you wanna really go balls deep, you can soak the potatoes pieces in diluted vinegar then let them air dry in the fridge overnight then fry them...

Gonna mix some chili beans and seasining in too, and see what we can come up with... And cheese, of course...
Gluttony imminent, and heart burn be damned...

Btw, no chili in the cabinet, and I stand firm on my "no bean dog" policy. Now I either have to make chili, or settle for plain ass dogs and fries... Decisions, decisions...

Here's my dad's recipe that I still use... buy a pack of the cheapest hotdogs and chop em up into a can of B&M beans (the ones with the big chunk of pork fat in them)... heat and eat. Preferably served with a cold beer after a fat doob.

That sounds fekkin delicious...

My project is in the works, and I just may have found the secret to making "no bean chili sauce".... Beans lol

Sauteed some onions, added chili beans, and mashed them with a potato masher, and cooked for a few.

Set those aside, and cooked ground beef with taco/chili seasoning.

Mixed everything back together with more chili seasoning, cumin, and salt, because it still needed it. Now it's looking like a lot of "Coney sauce" I'm used to seeing. Taste test still withstanding...
