That’s awesome I love me some prime rib your always cooking some awesome shit. I don’t fuck up the hamburger helper and we are having a good night lol…last year I did a 16 pound prime rib for Christmas and the way I did it you heat the oven than shut it off for so many hours than heat it again and shut it off…well we got a new oven like a week before Christmas well turned out I never shut it off lol let’s just say we all had to choke down extremely well done prime rib lol
Been there brother! Did virtually the exact same thing with the same method, but it was about 15 years ago cooking for a bunch of friends. I was serving overly salty shoe leather, but we were all absolutely shmammered drunk so it all got eaten eventually anyways lol

It's actually why these days I do 5-6 hours at 200° then I take it out to rest, crank the oven up to 500° and put it back in for 8-10 min. It's fool proof. No matter how high I get I can't screw it up haha.

I missed the Turkey this year cause I have been shopping at iga and they haven't had any...
So I did a ham a few day's after Thanksgiving, I planned on going to Walmart this month and get a Turkey for xmass but it didn't happen
So we're on the 3rd ham in a month, cause I made 1 last week also..

First ever cast iron pan pizza. Roasted garlic, olive oil, chile flake and fresh mozzarella.

Have to say, while I typically like the NY thin crust pizza, I think this is my favorite at home method now, super crispy crust
I'm gonna ask you to break this down. Is there toppings between layers of crust? Whats the deal with the cheese blow out, trouble getting it out of the pan?

So it's just a normal pizza crust that I topped with homemade roasted garlic. I also brushed it with the reserved olive oil from roasting the garlic, then added the chile flake and some oregano and topped the whole thing with fresh mozzarella... which is what led to he cheese blow out lol. I was rather stoned while doing this and virtually just threw big handfuls of fresh mozzarella on there, but the oven and pan were so hot the parts of the crust that didn't have cheese directly on them puffed up really quickly kind of creating a cheese river so to speak... one of the added bonuses to making the pizza in the cast iron pan is the cheese still stayed in the pan and didn't end up all over the oven like it has been known to do with my cheapo pizza stone. I really like white pizzas but learned the hard way that oil based sauces get much thinner than red sauces and tend to escape the confines of the crust... my kids still like to remind me of "dad's pizza incident" from my first attempt years ago. There was a lot of smoke. But the pizzas slide right out of the pan no problemo

My better half made a pineapple pizza after and it looked way more like a normal pizza. The cheese on mine that ran out was delicious though so I ain't made. Tasted like a garlicky mozzarella stick.

Shout out to cast iron for being one of the most useful cooking vessels on the planet! From pizza to deep fried fish to bread and cake
Yeah, everything in my kitchen except my stockpot and saucepan is cast iron or carbon steel. Not only are they versatile but they're virtually indestructible. They'll all outlive me. Pans should be a one time purchase in my book.

Plus they hit a lot harder than aluminum if you ever need to defend yourself...

We have a set of Dutch Ovens and cast iron stuff we use camping mostly, but I'm a huge fan of a cooking vessel you can stick in, on, near an open flame or bon fire, and also use in an oven and can make almost anything in it. There's a show called Good Eats with Alton Brown and he's made a lot using nothing but Cast Iron.
I love Good Eats. Whenever people ask me how to learn to cook better I recommend that show. Because he takes the time to explain why he's doing things. And I feel like knowing why your doing something is the difference between being able to follow a recipe and being able to create your own. Same reason Serious Eats/Food Lab is my favorite website for recipes. If you like Good Eats you should check out the Food Lab Cookbook by J. Kenji Lopez.

Pie crust/pastry dough by the way is an absolute enigma to me. My girl makes it a million times better than me. We use the same exact recipe (King Arthur Flour Cookbook), but hers is always better. I don't even bother anymore, I just ask her to do it.
