What's for dinner tonight?

Wait ....y'all got a cooking thread? I'm no cook by any definition, but I can boil chicken and I'm lights out with a can opener. After the chicken is cooked this can be made and on the table - never really gets that far - in 30 minutes, and lasts days for about $10 a pot.

Put the smoked pork roast into the pressure cooker

After cutting thr fat off and like uncle heart attack suggests put the fat on the roast so it renders into the meat while cooking.

Then shred the meat
20220125_174528.jpg
Then sauted in jalapeno salsa

Instead of tacos I made cheese and meat quesadillas

Not bad. Gotta eat something.

"Not bad. Gotta eat something"

Understatement of the decade. I like simple things and that looks amazing down to the paper plate. We can be friends.

I too like simple. We still have 3/4's of that roast and tonight I'll slice some of the meat and warm it with steam, make mashed potatoes and I saved 3 cups of that water from the pressure cooker to make gravy. I feel a food coma coming on already?
