Worked with a bloke from south Africa on-site about 10 years ago. He was talking about bunny chow and brought some in the following day. It was a beef curry that had some heat but not too overpowering. It goes in a hollowed out roll and a big bottle of milk to drink. Well that's what he told me. Great filling meal. Made it tonight minus the spice heat as Mrs and kids aren't a big fan of that. Went down a treat. Quick beef curry sauce in a hollowed out bread loaf or cob loaf / roll.

Found a nice little haul of Witchety grubs while out collecting native soils for my next mix . I’ve never tried them but apparently when roasted they have a nice nutty flavour . Native Aboriginals have feasted on them for centuries . View attachment 122420 View attachment 122421

I’m just jealous of all your access to that delicious looking seafood (bring on the prawns, hold the grubs until the apocalypse), being closest to Detroit myself lol

Haha, only way to face danger is to laugh in its face. No point being worried about things you can't control.

The curry I did was pretty basic.
Couple of kg of gravy beef or blade steak.
Season with salt and.black pepper and then dip in plain flour.
Go to fridge, grab cold beer and hold while browning meat. Brown in frying pan with splash of olive oil. Tip into slow cooker or big pot with beef stock and tomato paste and can of diced tomato's. Sip beer. Or neck it, up to you.
Dice up red onion or brown onion whatever you like. Splash of oil and into frying pan. Once translucent (clearing, big word for colonial convicts eh) tip into pot.
Sprinkle in a teaspoon cumin, turmeric, coriander, couple of bay leaves, few curry leaves if you have them. I add a flick of minced ginger and garlic (had jars of them kicking around so use what we have). Stir and bring up to boil then simmer. You can add a bit of coconut milk or thickened cream if you want. I didn't this time.

If you want it spicy I just add about 6 habanero chilli's diced up seeds and all and drop those suckers in. Simmer all day, longer the better but after a couple of hours you are tender and.ready to rock.
Now while it's doing its thing, grab another beer and marvel at your handy work.

We have Tuna, Prawns , Oysters , Crayfish , A shitload of scale fish to name a few . Oh yeah and Witchety Grubs

It was a perfect day to get the charcoal lighter out....the handle is fully gone now ...SMOKING...

Nothing like hardwood charcoal without lighter fluid...just tasty. The BBQ is a Napolean that i used for 11 yerars, the burners lasted the entire warannty ! Then i got a heavy dudy cookie sheet and hammered it into the bottom real good !

Takes a good bit of charcoal....i had it to 750 the other day when i was making pork tenderloins....my hands are so silky smooth...hairless !

Alton Brown uses that method with some vegetable oil on paper to get the Charcoal going. That looks beyond good bro ! Hunk of critter + Potatoes .... The German and Irish in me is squealing !

No pics, but, Fridays are for steak around here. (I swear, I meant to take pics, then got carried away finishing and plating everything)
Last week we grabbed a beef tenderloin, because that way, it was like $10.50/lb...compared to the $23/lb at the meat counter, pre sliced.
Went from the most expensive steaks, to the most affordable, just like that. And they slice it for you, so we ended up with 11, 1.5-2" filets.
So, I threw them on foil with some rock salt and pepper, on the main grill, in a puddle of butter.
Hung some bacon above them, on the top rack, and let the bacon rain down fat on the steaks (and burgers) as they cooked.
10 minutes per side on direct heat, and 10-15 minutes total, indirect heat. (Most people here like their meat without any pink *ducks*)
I’m not the biggest steak guy, so I usually do sausage or burgers. I did have a filet last week though, (bacon wrapped, not dripped) and it was one of the best steaks I’ve had.
Took the grilled bacon, along with some salt, pepper, cheddar, and ranch, and mashed it up for twice baked potatoes.
Rounded it all out with honey glazed carrots in the instant pot.
Dessert was Moose Tracks ice cream, Mississippi Mud cheesecake, and brownies.
