Thai Red Curry with chicken, mushrooms, snap peas and pineapple. We ate it with rice but I forgot to take a picture of the actual finished product lol. Too focused on the process. My friend whos new to cooking asian food asked me to document it so he can try and copy my recipe so I figured Id share it here too.

That my friend, looks amazing. I want to come to dinner. I feel lazy cause I haven't cooked anything that ambitious in quite some time. Industry burnout sucks, and my littles don't afford me the opportunity at current. Straight Killin it bro.

Honestly I havent been this ambitious in a while either and I dont even have industry burnout! Nothing lazy about it, just life. Trying to get back in the groove and cook some things I enjoy. Too much take out last year, it hurt my wallet and my stomach lol. And straight up when my kids were little like yours I sure as hell wasnt cooking anything like this. Now they always want homemade stir fries and stuff so its getting easier to motivate.

This one is all for me and my better half though. Kids still dont really do Thai curry lol. Too spicey, too funky. My teenager was at her BFs and I made some quick teriyaki chicken fingers for the 10 yr old so I decided to go a little crazy and make something for myself. A fairly large Choco Pie cone may have played a roll in the process...

Made some “ City Chicken”. It’s something my mom used to make me growing up, with a little fried broccoli, mashed potatoes and gravy.

My girls working late so I’m eating now. This will be the only real food I eat today

Spoiler : it’s pork tho. I learned the story behind it today from the butcher. They used to call pork, city chicken because you couldn’t raise and sell pigs within city limits. All hail the underground

Ok. Trying something different this time. Rinsed the salt off and applied a small amount of brown sugar, rosemary, celery salt and bay leafs to the fat side for an overnight infusion. I will wash this all off tomorrow and apply just cracked black pepper then into the smoker. Hope it turns out tasty ?. PXL_20230204_023152327.jpg

I can't remember who asked to post my process. But in a nut shell that was it. IMO way better than store bought. So many dishes will be made with this. Oh and, the tips and dregs from slicing will be put into sausage which I plan to make next weekend. Great timing for my friends who like football because I think there is a game next weekend. Homemade sausage and bacon for the party. Lol.
