I have found that the older the apple is "pink lady" that the better they are for baking...when they are fresh, they are so firm that they do not soften during cooking...but an older apple "pink lady" are perfect!
Eating them is awesome ...they are crisp, meaty, acidy tart and kinda sweet apple...you take a bite and you have to chew it...it's firm and all the flavors come out.

I personally love them for both. They tend to the firm side so they hold up well in baking situations. They have higher acidity, make amazing salads as well.
oh good to know! i love a good apple and walnut salad, maybe with a bit of blue cheese and some sort of sweet acidic dressing. yum!

but......that directly competes with space in my stomach for cheese fries and milkshakes......

hmm. I'll think about this one.
