The ham is from the butt (rump), bacon comes from the belly. Different process and cure

There is a back Bacon too, but I think the Canadian bacon you refer to is belly with a different cure. Canadians tend to like it a bit sweeter or saltier according to the other half , she’s from Germany and really knows Ham??
Canadian bacon is from the loin actually, which is why it's much less fatty than other bacon. Also why its rounds and not strips

The rounds are from back bacon, usually found with a pea meal coating here in Canada. And the bacon I eat is in strips of usually equal ratios of fat to meat. Just look for the maple leaf goodness!?

Ah, your an actual Canadian! To clarify then, what we call Canadian bacon down here in the states is your rashers or back bacon (which we should probably just start using that same nomenclature down here honestly)

Canadian bacon comes from the loin, Ham comes from well the ham lol and they are cured differently and our Canadian bacon is smoked 12 hours while the Hams are around 40 hours, there is cottage bacon too that comes from the front shoulder if you get cottage bacon you don’t get pork steak they come from the same part
