Zuchs are popping up from the garden...eating them EVERY day...but how do i make a snack of it.

I am thinking when i am tired of eating them cooked zuchini bread.... if anyone knows something else man PLEASE

i have 9 yellow and green zuchini plants and they are putting out like a porn star.

You could slice them up into pieces, and fry them with an oil you like and add crushed black pepper, stone salt, and red pepper flakes, and then sprinkle with Parmigiano?

Ok i'll be honest, i had too many zucc plants in the past and it does get old fast. I made a ton of baby food for the kiddo at the time and tbh 50% of every recipe was steamed/pureed zucchini just to get rid of the dang stuff.

Zucchini bread is good, you can use the same quick bread recipe to make pancakes/muffins with that are slightly more nutrient dense...

Half them lengthwise, scoop out the interior, and bake with your favorite stuffing + cheese on top

half em then quarter em length wise, remove the seeds, batter and deep fry like pickle spears

like billy said, bite size chunks sauteed in olive oil with seasonings + pepper flakes etc is pretty decent, its that interior seed layer that I like to remove to keep it crunchier vs soggy when cooked.

I did not care for the texture at all when cooked in soups/stewed/simmered etc so i pass on all those to someone better suited...

young zucchini make pretty good ranch dip vessels, just not when they get older and the skin is tougher

So my favorite way to eat them is just sliced with just some salt, pepper and olive oil then grilled. Theyre great cold this way. Also, if your feeling fancy, you can wrap the grilled slices around goat cheese.

They also make a great slaw eaten raw. Lots of recipes out there.

Also zuchini is really good breaded and fried. It even makes a great parmesan in place of or combined with eggplant.

And my mom makes a recipe where you slice them as rounds and layer them in a lightly greased pan, season with salt and pepper, then cover them in crushed tomatoes and chopped basil, then top that with bread crumbs and parmesan cheese. You can make it on the stove top or in the oven.

I ate a lor of zucchini growing up lol. I only plant 2 plants these days, one green and one yellow summer squash. Otherwise I end up with way too much.

You could always make some ratatouille! It's easy enough and freezes super well once it's made.
