Why is it that there are many types of fish that we eat and many of them taste completely different.
A salmon, and a halibut, and a red snapper all taste different.
But other animals of the same type taste the same. You cannot eat a steak and tell me what breed of cow it came from.
Fish taste different, cows taste the same.

I could only suggest the DNA of say a Cow doesn’t vary significantly as they’re all pretty well grazing , grass feeding and two a degree limited dimensional beasts .
Enter fish . Some eat weed , some eat each other . Some are pelagic , some are territorial . Some are rapid high velocity hunters , some lay and ambush . With this you’ll find different muscle compositions to cater for it and hence bigger thicker bloodlines like in a Tuna for example to supply the oxygen for rapid movement . While a slow moving more static fish will have far less blood meat usually producing a whiter flesh .
All these variables would have to have an affect on taste and texture .
Just my thoughts on it while sitting on the crapper

Comparing fish to cows isn't really valid.

Fish are a huge and varied group. Comparing cows to say, cod or salmon, something that has different varieties but is of the same family, is more of a realistic thing.

Or, comparing fish to another large group like mammals, you will see the same variation of texture and taste.

Regarding similar mammals, I know that it is easy to tell moose meat from deer meat, and I would presume a beef rancher or other knowledgeable person would be able to tell the difference between hereford and angus and charlolais steaks.

Did you know that in September 1844 the first ever International match of any sport was played between USA and Canada .
Remarkably it was the ( to you guys ) little known sport of Cricket which is huge in a number of other countries .
