In Bloom
300 g's strong white flour,
75 g's hard winter wheat,
25 g's rye,
80 g's starter from discard jar,
300 g's water,
8 g's salt
465 f for 30 minutes no steam, no dutchie.
It needed maybe 2-3 more minutes.
Very nice crispy crust, sour dough, with a bold rye taste.
I'm not quite there yet, but it is a delicious slice of bread, but probably not for everyone....just the rye fetish folks, will like it.

Crumb looks pretty open considering all those whole grains!!

Love rye bread. A burger place around here has optional rye buns. I always take that route.

Kids and I made soft pretzels Saturday. They turned out pretty good. I waited a little long to salt them after the soda bath, so it didn't stick as well as I would have liked.

Right after I took this pre bake pic, I realized we didn't fork em, so they got pulled out forked.


I just use white flour. I think I want to up my flour game for next time. Gonna have to look back through this thread.

UncleB, I never heard of Diastatic Malt powder before!! Then when looking it up, it is easy as hell to make yourself!! Thanks for sharing!
Simple sprouted barley berries, then dried/milled. Damn man, game changer!!

Its funny how often you and I end up doing the same thing on the same day. Im looking at starter instructions online as we speak. Was gonna order one but decided to take another crack at doing it myself first.
Man, I see a decent amount of us doing the exact same thing every day. I mentioned it to my girl the other night all completely mind blown, talking synchronicities and string theory and she looks at me, rolls her eyes and says " yeah, you guys all seem verrrrrry similar". I didn't know how to take that hahaha
