Last month I forgot to initial my cooling temp for 1100#’s of summer sausage I wrote the temperature but forgot to initial it had to throw it all in the barrel for the rendering company at $12.99 a # let’s just say my asshole still hurts from thatWow, I couldn’t imagine that. We had ABC up our butts (Alcohol Beverage Control) about once a month. I couldn’t imagine having my shoulder looked over all the time. Would drive me nuts. I mean as you said you’re going to do your job right because you want to be successful but it’s still nerve wracking and stressful.
