After a couple run ins with cancer I've done much study on the nasty crap people eat.
I'd go with "Opportunistic super predator" though a Flathead is in no way a scavenger; The "stink baits" people use for smaller Channel Cats and Bullheads don't generally work on them; Lures or Live bait is the usual method for Flatheads at least. But yeah a Bullhead will literally eat greens if they're hungry. My Red Tail likes Bananas LOL. The main way I identify Catfish is the anal fin since the number of rays is a lot more accurate, mostly because male Spawning Channel Cats can turn a slate blue color and become harder to identify. Food is like art though; Not everyone likes the same stuff and I'm sure plenty of my fellow Michiganders wonder what's wrong with me when I say I use Walleye, Trout and Salmon for bait haha.
