Was craving some Loco Moco recently 😋 it almost never looks good in a picture but OMG man the "pan cracklins' really set it off with a lil crunch, but still carrying the same flavor profile as the burgers.

White rice, burger patty/patties, scrambled egg(s), brown gravy 👌 PERFECTION

I had it on my brunch menu in a dc restaurant that the owner was born and raised in Maui. Very cool brother dont see that one much!

Cool . I proof for 5hrs in vege room (84 degrees) then refridgerate for 24 more hours. Or straight in fridge for 2 days. Remember to let sit at room temp after fridge before shaping at least 3 hours

I'm not sure if this is a Michigan only thing, so I figure I'll ask, but have you ever had "Freshwater Scallops" ? Basically it's the cheek meat from a Walleye.

Well, if you ever head up this way, it's our most prolific species apparently. We have a bunch of Walleye here, and they are a really tasty fish. The cheeks though, totally have this weird flavor to them compared to most that is really good in my opinion.

That oddly sweet meat flavor is a nice one That's I think why the Walleye Cheeks get that moniker around here because of how sweet they are.

Smoked 2 slabs of baby back ribs today. Fall off the bone goodness!! Some butter fried asparagus (splash of lemon juice) and some beans (fartin' beans, as my son calls them).

I used the bbq sauce I got while on vacation in west virginia. It has a little kick to it, but not too bad.

Pizza Friday lol...someone ( I can't remember who and to high to search) about the ooni. The 16 is awesome! I'll never buy pizza again. Here in this communist state of CA 4 pizzas of questionable quality would be about $80-$160. I just made 4 for $20. With %100 better flavor. Not to upset the useful idiots but 🖕to the people who ( and who vote for them) that are making the prices so high and quality folks move away.
