I love Good Eats. Whenever people ask me how to learn to cook better I recommend that show. Because he takes the time to explain why he's doing things. And I feel like knowing why your doing something is the difference between being able to follow a recipe and being able to create your own. Same reason Serious Eats/Food Lab is my favorite website for recipes. If you like Good Eats you should check out the Food Lab Cookbook by J. Kenji Lopez.
I've been watching that show for quite a while. It piqued my interest when I was younger and then again later on when I got into Catfishing as he has an episode all about Catfish! Haven't tried the Ceviche but I would totally eat it lol.

Dinner, that's what.

$3.75 chuck eye steak, salt, black, green, Sichuan peppercorn blend, fresh thyme.

Cast iron, high heat, sear both sides, reduce to med.low, 4-6 mins a side, red wine. Halfway through, few knobs of butter, few cloves of garlic, thyme to finish. Sides are garlic parm & thyme fingerlings, broiled lemon pepper asparagus, portabella in butter and garlic, sourdough tossed in the steak sauce and broiled, and a spinach salad

I did a chicken stir fry as well tonight! But I made garlic noodles with mine. Also I totally winged the sauce/marinade so it doesn't have a name. It tastes better than it looks too lol

Regarding doing pizzas in the oven. I always found it a pita to get the stone hot enough to actually brown a crust in a conventional oven. The BBQ hits 675 ..550 seems to be the sweet spot to get it good and hot.

To fix the problem in the oven i use big non stick frying pans...and i preheat them....Stretch my dough out and put it on the hot pan...top and bake.

400 for 20 minutes is usually perfect.

I try and stick to a max of 3 toppings per pie and they can be pretty much anything..red sauce..white sauce...just potato olive oil and thyme, BBQ Sauce, chicken and slivered onions, Sausage, onion and olives...the possibilities are endless and i have a pretty stocked pantry.

Pizza is my go to...i can make a dough pretty fast (6 3 1 1, 6 cups water, 3 cups flour, 1 tablespoon each of salt and yeast..mix water salt and yeast then add flour...knead it just until mixed and leave it in a warm place til you make pie...longer makes it better).

Wife and I are both Irish, she's a ginger. I've got a bit of Germantic from Austria but we both LOVE potatoes.
