What's for dinner tonight?

Had the whole family over for a bbq today. Ribs, brats, and all the non picture worthy items like tater salad and baked beans. The ribs turned out amazing, started smoking them last night and then to the grill with some sauce to form a glaze today. I've put on close to 15 pounds since the stay at home orders ??.

That is what i am making tonight. I am going to start the dough in half an hour and let it proof all day.

The tomatoes i use will be san marzanos in the garden...grown in organic soil and so red if i sneeze they might fall off the plant.

The last one i made was so close to what i had in Chicago i was very surprised. This should top it.

As the weather cools its time for me to look up tasty recipes and cook some awesome food. Everyone is gaining weight so i think its working out ok.

Man @OldG you have crazy cooking skills. Your family is very lucky. I am like a damn duck out of water in the kitchen :ROFLMAO: . The few times i do venture in there i am told to get the hell out:ROFLMAO:

@OldG that sounds delicious! San Marzanos are my favorite plum tomato! Chicago deep dish ain't pizza though ... but it is delicious :ROFLMAO:

Got a whole leg of lamb marinating right now for this evening. I'll try and snap some pictures when it comes off the grill... one of my favorites... I make a Moroccan marinade for it... gonna make a nice caprese salad with it with some basil and heirloom tomatoes from the garden and some mozzarella from a local farm and probably some homemade rice pilaf

Chicago Deep Dish Pizza

Wow is it good. Really really good. The crust is heavenly and the 8 hour proof made all the difference in the world in the texture and flavor.

2 weeks ago i ordered a crappy pizza. This was the reminder to never order pizza again.

Crust
Cheese

Raw Sausage
Pepperoni
Crushed tomatoes and that's it. So simple it cant taste good you don't even season the tomatoes but...the seasoning is in the sausage and pepperoni and when you add tomatoes to those flavors it is heavenly pizza.

1/6th of the pie is all i can eat and i am a big dude so shes a big pie but i really recomend giving it a go. I cooked it in a non stick wok it was the closest thing i had that was made of metal so it would brown right. Because of the thicker pie i cooked it for 40 minutes at 420 and then dialed it down to 350 for 10 and let it sit for 15.

Moroccan Grilled Leg of Lamb (locally raised) and Caprese Salad, basil and tomatoes grown by myself... salad made by my kiddo

The rice pilaf never happened... our expected guests bailed and the kids prefer plain old white rice... also my youngest won't eat sheep or lamb because of Minecraft? So he had hotdogs ...

PS if anyone ever wants to argue about who makes the best hotdogs... I'm a virtual aficionado of tube meat... it's a guilty pleasure

Edit: Meant to include my lamb marinade!

1 tsp each: cumin, fresh ground nutmeg, berbere (or other chili powder), black pepper, tumeric, coriander

1 tbsp: fresh minced ginger, salt

Whole head of garlic, one small onion minced or smashed with a mortar and pestle, 1/3 cup extra virgin olive oil, juice from half a lemon, handful of minced parsley and cilantro
