Ok so I screwed up my brauts last round. Tried a new technique...hot water to pre-cook. A friend corrected my flaw. I need to char in the BBQ then steam In eer and onions. ?...

The reason why you par-boil the brats/sausages, is the boil/cook them nearly 1/2 way then finish on the bbq. This helps to fully cook the sausage and prevent burning on the grill.

I'm making beer cheddar brats tonight. The brats cook in a disposable pan (filled with beer) on the bbq, then finish on the grill to get the grill marks on the brats.

I'll cook the onions and green peppers the same way. Then onto a toasted bun.

The pork belly is a 3 day event. They are thawed. Today is seasoning day. Wrap. Next day is cook day. Refrigerate. Next day cut into bite sized pieces, slather with sauce, back in the oven to allow then bbq sauce to caramelize.

Ive done the steam bath both before and after the grill and liked both ways, but the beer and onions are the key! Just water takes too much flavor from the brats. Ive also done beer, onion and apple slices in the steam bath which was really good.

The biggest difference I found is if I steam then grill you get a lot of splits because the casing already shrank before you hit the brats with the high heat, but I didnt think that made them any less tasty!

The youngest likes Ketchup on her Hot Dogs.... I just look at her like "I've failed you young one" LOL.
Ketchup on hot dogs is fine! Probably the only place its completely acceptable. Even fries have better options. Personally im a mustard, relish and diced onions guy (or chili) but Im not mad at anyone who puts a little Heinz or their dogs.

I have an interesting relationship with Ketchup; Eggs and Toast, it's fine. Fries it depends on the Fries, but Tator Tots and Hash Browns ? Yes!

Coney Dogs here have sliced raw onion, Chili, and Mustard which is exactly how I like them. Relish I'm cool with, I love pickles.
