Here's a good one for you all.

Buttermilk soaked chicken thighs (22hr soak time). Never soak longer than 24hrs with buttermilk. The enzymes will break down the protein too much if you do and will be blah!. Beer can chicken rub, then bbq'd and slathered with bbq sauce.

Below are my brine bags I use. Reusable silicone bags.

Also, if your in the market for a new grill, grab an INFRARED grill. Best grill upgrade ever. Literally NO fire flame ups!

My super blood brother’s mom’s chicken/pork tamales. These are very special. Not only cuz they’re bomb but because she puts in a special ingredient - LOVE ? She made a special batch for my family. We’ve been friends for going on 50 years.

Back when I was in the womb his mom was also pregnant w his older brother. They met at the local park, both waiting for their husbands to get off work. They both didn’t know English and didn’t speak a common language so they just pantomimed and whatnot. Then the magical moment happened. They bumped bellies and my absolute first blood brother moment occurred. We grew up together and did everything, camping, fishing, sports, dogs, etc. then he tragically died in a car accident on the way to work in the fog when we were 19. I was older by a month and 2 days. So many more crazy details on that whole thing if any of you are interested. He is buried near a nice flowing creek under huge trees in the most beautiful cemetery I’ve ever seen. Imagine being a pall bearer helping to carry his coffin at 19 then sprinkling dirt onto his coffin as it was lowering down and watching his little 13 year old brother try and jump onto the coffin in anguish and despair? I told his parents at the funeral that I would take care of his little brother and I’ve stuck to it for my whole life making it a priority. Losing an older brother is tough enough but if you have another mentor that has that beyond friend connection you can handle life better. I took him so many places. Taught him so many things to be a man. And now he is the man doing so many good things. I’m not saying it was just me that did this. We experienced things together and he has also taught me things. I visited his brother at the cemetery just a little while ago and these tamales show up. Perhaps some Mexican Soul Food.

I found a market with a sweet italian sausage very light on fennel.

I have a 6 foot 4 and a half 17 year old...so...PASTA..i get it by the fat pack at costco...and for real...GOOD pasta is worth the difference.

10 for 12 pasta is ok

6 for 12 pasta...organic...its cut with fatter dies...has texture in the ridges to hold your pasta.

This batch was 2 pounds of sirloin ground...a fat coil of sweet italian (about 2 pounds) stripped and smashed into the browning beef...3 pounds of mushrooms..and 2 jars of my favortie sauce with water to rinse out the jars and set things going nice.

1 coil cut into links.

This is my...any day sauce... (AKA Sunday Sauce)..

I do love it a lot. I got a request for it yesterday so i made enough for...well I must FILL the pot.

So...the only way its less sauce is with a smaller pot.

Been a fan of MORE and TOO MUCH since I was born.
