I've never made my own bacon, and am really looking forward to seeing your method!!

I'll post my method and pics as I go... because it is the BEST bacon! You'll never buy it from the store again. One day I ran out and my son asked for some bacon so I bought it from the store....cooked it for him and he looked at it, tasted it...and said " please dad, don't ever do this again!" Lol. ....2 must have items: 1. Smoker 2. #1 curing salt. I order mine from the sausage maker ( out of buffalo N.Y.) oh and a meat slicer is very helpful in slicing the cuts ( thickness) you like.

Tried a plant heavy dinner tonight. Its not vegetarian, cause theres bacon fat in the beans. Not my strong point, there were also supposed to be some sauteed dandelion greens but they were way too bitter sooooo beans, bread and sweet potatoes it is! I roast a mean sweet potato if nothing else haha.

Homemade banh xeo w a fish sauce dip. Used Pizza Hut red pepper packets lol. They’re like dinner crepes. Such a treat. Rare that I have these cuz they take a bit of work.

Ive never heard of this dish before so I just Googled it, definitely need to give this a try! Would love your recipe if youve got one to share

The chefs directed me through some sesame chicken tonight. Pickles are with cuces from my indoor garden.

I really like the chicken fry, it's 50/50 cornstarch and flower, then all your seasonings, so it's super light and crunchy. lighting was wierd, the chickens all cooked lol

Made velvet lemon ginger chicken last night. Took the leftover rice and made fried rice tonight. I love making fried rice.

I always attempt to make extra rice for fried rice the next day but it only works out like half the time. Looks awesome!

The bacon journey begins. So the slab I got was about 12 lbs. And to large for my pan so I had to cut it in half. 1 tsp of cure #1 per 5 lbs I mix that in about 1 cup kosher salt. Generously apply and rub in. Wrap. Place in fridge. Turn over every day x 6-7 days. More to come next weekend



Then I make homer Simpson's BLT..Bacon, Little more bacon Top it off with bacon

Half a buche (pig stomach) burrito from a local taqueria. Was good but I think the other more ghetto location is better. Had tripas (cow small intestine) crisped up in tacos and buche tacos w my son. He was like wow this is good thanks daddy. I think black soul food calls em chitlins but I haven’t tried their version yet. Discovered all of this out street racing late night back in the day in the most ghetto of ghetto places. Sucks it ain’t there any more but man it was a riot. Was like a sport stepping over all them needles n dodging all the crackheads. Open 24/7 Fkn absolutely bumping at 2 am

Thai Red Curry with chicken, mushrooms, snap peas and pineapple. We ate it with rice but I forgot to take a picture of the actual finished product lol. Too focused on the process. My friend whos new to cooking asian food asked me to document it so he can try and copy my recipe so I figured Id share it here too.
