Oh, it was delicious, but I'm always a sucker for some good Mexican! We actually made chimichangas the next night or two, and they hit the spot!
Last night we made an Italian sausage pasta, which I didn't get a pic of, but I made these Hungarian wax peppers on the side, stuffed with sausage, onion, cheese, and wrapped in bacon, which I did get a pic of, before we devoured them all.

Not dinner, but a quick afternoon snack...

Steak-ums, grilled onions, Swiss, and horseradish sauce, on a hot dog bun... While the pasta sauce simmers for dinner!

Thanks, @Gentlemancorpse , they're always a fun appetizer to make, especially with an air fryer, as it takes like half as long as the grill.
The original recipe is taco seasoned chicken, onion, cheese, jalapeno, bacon wrapped, and done on the top shelf of the grill. The heat really brings down the heat of the peppers too. We've even done stuffed habaneros, and they weren't too hot. The wax peppers are somewhere between a pepprocini, and jalapeno, heat wise.

Did a beer butt chicken today. Cold smoked it for a couple hours and then wrapped in foil on the grill to finish.

Does that smoker actually work off the grill or is it just there for the picture? I'm actually looking at smokers right now... I've been using the weber kettle grill and it does a decent job but cant do a bunch of ribs at once like I want too

You can get good BBQ off a Weber. It's all about temp and fire management. What's your budget? I got a cheap stick burner from Lowes that works great but required some minor mods and tending every hour or so. But I can get 4 racks or a full brisket or 2 turkeys on the Okie Joe Highland. My biggest gripe is I wish it had a bigger firebox. If you got money to burn, I heard that Aaron Franklin is selling a nice offset cooker.

You can get good BBQ off a Weber. It's all about temp and fire management. What's your budget? I got a cheap stick burner from Lowes that works great but required some minor mods and tending every hour or so. But I can get 4 racks or a full brisket or 2 turkeys on the Okie Joe Highland. My biggest gripe is I wish it had a bigger firebox. If you got money to burn, I heard that Aaron Franklin is selling a nice offset cooker.

Yeah, Ive done well with the weber (other than brisket) but it's kind of a hassle to keep the temps consistent and like I said, theres just such limited surface area

I just looked up the Aaron Franklin and wow... that things is nice haha... but definitely out of my budget, I'm trying to be under $700

Ive actually been considering a propane or pellet smoker... I'm kind of looking for easy right now... eventually I'm gonna build a big stationary smoker in my back yard but the list of projects that are coming first is long... grape trellis, greenhouse, have a 200 gallon syrup tank I want to turn into a water tower for irrigation, ... then smoker lol

Got country ribs and potatoes in the slow cooker, with green tomatoes waiting to be fried on the side.
Smoker is sitting on the grill.... Learn your smokers before you buy. There's cold smokers and hot smokers. There is actually quite the variety these days. What I have here is a cold smoker, great for fish, cheese, sausages, etc. Or putting a lot of smoke flavor into large cuts of meat to be transferred to another cooking method. I do that a lot with it, I'll cold smoke a brisket for a good 3-4 hours and then wrap it in foil and finish it in the oven overnight. Comes out amazing. There are cold smoker attachments that can mount to just about any grill too. And then there are the Traeger's, I'll be getting one of them in the near future, you can do just about anything with them but the cold smoke. BIG fan of bbq-ed meats if you can't tell, lol.

For ease of use I would look at the pellet smokers like a Traeger. I also have a propane smoker and it makes good BBQ but the Q never gets a good bark. I haven't used it since I got the offset smoker. I think the pellet smoker might give you the ease of use with quality BBQ but do your research.

Can't go wrong with the Traeger's. The ease of use and consistency puts you're average backyard bbg guy over the top everytime lol

Traeger grills are really good. You can smoke well on any BBQ.

I am a chicken master on the BBQ and i use a teqnique i invented...or at least i think i did.

I call it direct-indrect heat.

You heat up your gas grill (need multi burners)....then turn off a burner and put your chicken on there (marinated...dry rubbed etc).

In about 10 minutes open the grill, turn on the burners that are off, when they catch fire turn off the ones that were previously on and flip your chicken to that side....repeat every 10 minutes until done.

What this does is...burn off the grease over time so you dont get inferno flareups.

Prevents all flareups on the chicken and it will make the best damned chicken you ever BBQd

All of my family requests it when they come over in the summer...please tell us you are going to BBQ chicken...

I also use fresh air chilled chickens (Costco for the win) and i cut them down into 8 pieces each.

Anyone can master BBQ chicken using this method...and its a big deal because if you dont do it right its a bitch to cook thick pieces of chicken.

Takes about 45 minutes to 1 hour to cook at 325...i sometimes smoke them with foil pouches of applewood and turn it down to 275 for 1 hour 30

That's a nice technique man. I do the indirect heat thing a bit myself. The chicken above was cooked under indirect heat when it was wrapped in foil on the gas grill.
