Been there brother! Did virtually the exact same thing with the same method, but it was about 15 years ago cooking for a bunch of friends. I don’t fuck up the hamburger helper and we are having a good night lol…last year I did a 16 pound prime rib for Christmas and the way I did it you heat the oven than shut it off for so many hours than heat it again and shut it off…well we got a new oven like a week before Christmas well turned out I never shut it off lol let’s just say we all had to choke down extremely well done prime rib lol
It's actually why these days I do 5-6 hours at 200° then I take it out to rest, crank the oven up to 500° and put it back in for 8-10 min. It's fool proof. No matter how high I get I can't screw it up haha.
