My wife has gut issues so i fry the mushrooms first....and no washing...dust them off with a towel....fry bacon...remove...fry mushrooms in bacon grease...

I've never even caught a tarpon. I don't think they are good eating iirc.
Grouper, flounder, scallops, crab, mahi mahi, swordfish, snapper, are the main staples from what I remember. Oh, and the place that used stingray plugs (cookie cutter shapes from a stingray's wing) in place of scallops. They got busted.
